There is no truer experience when traveling than when you experience the soul of a destination through the local cuisine. So in honor of National Culinary Arts Month, meet the Star Lounge culinary team who brings to life the refined art of good food and the soul of Sacramento every day.
Executive Chef Graham Forbes, at Star Lounge located inside the Hyatt House Sacramento/Midtown and formerly the Chef de Cuisine at the Kimpton Sawyer Hotel, leads the extraordinary Star Lounge culinary team and has worked in kitchens for over 18 years.
Why did you become a Chef?
Chef Graham: I started washing dishes as one of my first jobs in high school. I loved the fast-paced intense atmosphere. From there I moved to prep and after stints in other fields I always come back to cooking.
What do you love most about your job?
Chef Graham: My team!
What most excites you on the Star Lounge menu?
Chef Graham: Our Short Rib Tacos topped with lime cabbage slaw, avocado purée, micro cilantro, and cotija.

How long have you been in culinary arts?
Chef Josh: I have been working in kitchens since I was 14 years old!
How do you describe your cooking style?
Chef Josh: I specialize in making scratch made, humble comfort food.
What do you love most about your job?
Chef Josh: I like being able to give back to the Sacramento community by using sustainable ingredients from small, local businesses.
Chef Dustin has been cooking since 2007 and has experience working in several restaurants prior to Star Lounge as a line cook.
What is your favorite dish to cook?
Chef Dustin: Breakfast is my specialty; I am known for my hollandaise sauce!
What most excites you about working at Star Lounge?
Chef Dustin: I like being a part of this cool, new experience and am excited to start a weekend brunch in the future.
